Gluten-free Blueberry Waffles | Vegan, Soy-free, Nut-free, Allergy-free

Crispy on the outside, chewy on the inside. You don't have to miss out on waffles just because of a few (or even many) food allergies. The magic of these waffles is all about what it doesn't have. Eggless, dairyless, riceless, soyless, glutenless, cornless, nutless, oatless, but definitely tastemore.

Ingredients

  • Dry Ingredients:
  • 1 1/2 Cups Bob's Red Mill Gluten-free All Purpose Baking Flour
  • 1/2 cup coconut sugar - Nutiva Organic Coconut Sugar
  • 1 tsp Baking Powder - Bob's Red Mill Baking Powder
  • 1/4 tsp Baking Soda - Bob's Red Mill Baking Powder
  • 1/4 tsp Sea salt
  • 1/2 tsp Cinnamon - Simply Organic Ground Cinnamon
  • Wet Ingredients:
  • 1/2 cup finely grated Zucchini
  • 1/2 cup finely grated carrots
  • Flax "egg" substitute 1 1/2 tbs ground flaxseed mixed in 4 tbs warm water, mix and let sit for about 5 minutes - Bob's Red Mill Golden Flaxseed Meal
  • 1/4 cup light olive oil
  • 1/2 tsp vanilla extract - Simply Organic Vanilla Extract
  • 1/2 cup water
  • 1 tbs raw apple cider vinegar - Bragg's Apple Cider Vinegar
  • Fold in 1/4 cup Frozen Blueberries

Instructions

  • Instructions:
  • Combine dry and wet ingredients
  • Fold in berries
  • Pour batter into waffles maker and close
  • Cook for about 4 mins on each side
