Ever try to make a waffle in a George Foreman grill? Don’t do it.
 
Despite my longing for a delicious waffle, I refused to buy a waffle maker. I learned with great difficulty how much harder it is to create alternative recipes without the proper appliances and so I swallowed my pride and finally broke down and bought one from Amazon borrowed my mom’s.
 

Gluten-free Blueberry Waffles

Even though it takes up way too much cupboard space, once I sorted out this recipe it became too easy not to make them. Now it just sits atop my counter like an avant-garde art piece in between it’s bi-weekly use. If you love waffles and have allergies I highly recommend the investment, also I’m sure mom would love to hear from you.

Ingredients
  

  • Dry Ingredients:
  • 1 1/2 Cups Bob's Red Mill Gluten-free All Purpose Baking Flour
  • 1/2 cup coconut sugar - Nutiva Organic Coconut Sugar
  • 1 tsp Baking Powder - Bob's Red Mill Baking Powder
  • 1/4 tsp Baking Soda - Bob's Red Mill Baking Powder
  • 1/4 tsp Sea salt
  • 1/2 tsp Cinnamon - Simply Organic Ground Cinnamon
  • Wet Ingredients:
  • 1/2 cup finely grated Zucchini
  • 1/2 cup finely grated carrots
  • Flax "egg" substitute 1 1/2 tbs ground flaxseed mixed in 4 tbs warm water, mix and let sit for about 5 minutes - Bob's Red Mill Golden Flaxseed Meal
  • 1/4 cup light olive oil
  • 1/2 tsp vanilla extract - Simply Organic Vanilla Extract
  • 1/2 cup water
  • 1 tbs raw apple cider vinegar - Bragg's Apple Cider Vinegar
  • Fold in 1/4 cup Frozen Blueberries

Instructions
 

  • Instructions:
  • Combine dry and wet ingredients
  • Fold in berries
  • Pour batter into waffles maker and close
  • Cook for about 4 mins on each side
